Apple Blow Fizz
Next week is Thanksgiving and then we’re really in the thick of the festive, holiday season. At that point it’s all about apples, turkeys, chocolate and lots of lots of cocktails. So, I thought I’d get the ball rolling today with something festive and full of bubbles. But just because it has bubbles doesn’t mean it has to have champagne. No, there are plenty of other options: ginger ale, sparkling cider and tonic water just to name a few. The most common source of bubbles though, is club soda.
I love club soda in cocktails. It’s great year round. In the spring and summer it makes a drink really refreshing, while in the fall and winter it makes the drink festive. I don’t really care what kind of bubbles they are; champagne, ginger ale, tonic water… they all add flavor to a drink. A flavor that can make or break a cocktail. I love the flavor of a good ginger ale or champagne. But the flavor of tonic water, that flavor I do not like. I hate the quinine that’s used to make tonic. It adds a bitter flavor that no amount of alcohol or mixers can take away. But what makes club soda so great is that it doesn’t really add any extra flavor to the drink. It just adds bubbles. It’s those bubbles and this festive time of year, that made me want to try today’s classic.
I found it listed among the Fizzes in Harry Craddock’s Savoy Cocktail Book. I’ve made other classics from the Savoy before like the Pegu Club and the French 75, and been happy with each and every one of them. This drink is no different and is a great way to usher in this cool, holiday season.
While Craddock’s recipe calls for Calvados, I chose to use Laird’s Apple Brandy. See, the Calvados has a more bitter apple flavor than the brandy and since this time of year is all about apples, I wanted something a little sweeter, something that tasted like rich apples, something that you’d want to sip during these cool fall months. The fact that Laird’s dates all the way back to the 17th century makes it the perfect liquor for this cocktail. A cocktail that’s rich, velvety and full of fizz. A cocktail that’s absolutely perfect for this festive, holiday season.
Ingredients
- 2 ounces apple brandy
- 1/4 ounce lime juice
- 1/2 ounce simple syrup
- 1 egg white
- splash of soda
Instructions
- Place all the ingredients except the soda in a cocktail shaker. Dry shake for about 10 seconds to emulsify the egg white.
- Add ice and shake vigorously until chilled. Strain into a wine glass, add a splash of soda and serve.
