7-Layer Greek Dip
Well, it’s official. The Super Bowl is just under two weeks away. We’ve got our teams – The L.A. Rams and the New England Patriots (yay!), and it’s set to be one hell of a game. So, now that we know who’s playing and who’s leading the half-time show all that’s left is what to serve at your (or your friend’s) party.
Chicken wings are pretty popular. So are chips and dips and guacamole. One very popular dip choice is the 7 layer dip. You know, that dip that comes in a large pan with layers of refried beans, ground beef, salsa, guacamole and sour cream. It’s always on every big game table because it’s so easy to make and everyone loves it, including me. And up until a few months ago it was the only way I ever would have thought to serve it. But then I met Rachel Hollis and that all changed.
She has a great cookbook that I love. I use it all the time. As a matter of fact, I’ve already posted a few of the recipes here. It’s called Upscale Downhome and it’s filled with ideas for “snacks, dips, casseroles, potlucks (as well as) parties.” All the recipes are great options whether you’re cooking for the family or a large group. This dip is perfect for both.
See, it’s a great choice when the kids are getting restless and there’s still an hour or two before dinner. But it’s also a great option for a party. It’s easy to lay this dip on the table and have people grab a carrot or cucumber and dunk it in as they go by. But here’s my favorite thing about this dip: it’s healthy. I mean it’s made up of hummus, bell peppers and greek yogurt. And instead of chips you’re serving it with carrots, tomatoes and cucumbers. It’s a tasty treat and a nice alternative to all those greasy wings and salty chips. Don’t get me wrong, I love those chips and wings but I also love a good dip, and this is a very good dip!
Ingredients
- 1 (25 ounce) container of hummus
- 1 cup plain Greek yogurt
- 1/2 cup red onion, diced
- 5 red and orange sweet peppers, diced
- 1/4 cup Kalamata olives, chopped
- 1/4 cup feta cheese, crumbled
- 2 tablespoons pine nuts
- 1 teaspoon dried oregano
Instructions
- Use a spatula to spread the hummus in a circle on the serving plate.
- Top with the Greek yogurt in a smaller circle.
- Top with the onion, then the peppers, then olives as their own separate layers.
- Sprinkle the top with the feta, pine nuts and oregano and serve with baby carrots, sliced cucumbers and pita chips.
