Rosemary Chicken Potato Pizza
A couple weeks ago I attended my first Food Bloggers LA meeting, the theme of which was potatoes since the guest of honor was Don Odiorne, the VP for food service for the Idaho Potato Commission. I know I mentioned all of this in last week’s post on the Chocolate Potato Cake, but the reason I’m bringing it up again was because I went home with a lot of potatoes from both the Potato Commission and Melissa’s Produce.
Now I’m not a big potato person. I actually prefer yams over the white spud, but since I now had so many, I was determined to come up with a recipe or two. One of the first things that popped into my mind were roasted potatoes with rosemary. But I wanted to make an entreé recipe. So I thought why not take that awesome side dish and turn it into an entreé? I came up with a healthy pizza which you can find as part of my Tonight’s Dinner column over at She Knows. It was delicious and a nice change of pace from the standard pepperoni pizza.
