Irish Whiskey Highball
When I think of St. Patrick’s Day, I think of leprechauns, pots of gold, rainbows, corned beef and green beer. I love all those things except for the green beer. I’m not a big beer fan anyway, but turning it green really makes me gag. So, I look for alternative green cocktails to celebrate the famous Irish holiday. In the past I’ve made Irish Coffee, a Last Word, a Clover Club and a Grasshopper Cocktail. They’ve all been delicious alternatives to that nasty green beer and a few of them have even been green in color.
Well, today’s cocktail is another one that’s perfect for the green holiday, but it’s neither green nor beer. Similar to the Irish Coffee, this classic is also made with Irish Whiskey. But unlike the Irish Coffee, this drink doesn’t have a lot of other ingredients. As a matter of fact, when it comes to Irish cocktails, this might be one of the easiest out there to make as it’s only two ingredients.
You read that right, two ingredients. Of course one of them is Irish Whiskey, but the other is either ginger ale or club soda. While I love club soda (especially with lime), I went with the ginger ale because of its sweetness. See, the sugar in the ginger ale means you don’t need simple syrup. One less ingredient means less time mixing it up.
But those two ingredients aren’t the only reason this drink is so simple. The whole cocktail is built in the glass. That’s right, no shaker, no bar spoon, no strainer. Just one highball glass, a little whiskey, a little ginger ale and a twist of lemon if desired. It couldn’t be easier. And an easy cocktail is just what you want on a holiday known for its drinking. So, this year, forgo the green beer and grab a bottle of Irish whiskey instead.
Ingredients
- 2 ounces Irish whiskey
- 4 - 6 ounces ginger ale
Instructions
- Place a few large cubes of ice in a high ball glass. Add the whiskey and ginger ale. Top with a twist of lemon and serve.
